bacteria are added to the milk and, as live cultures grow, fermentation occurs in which the lactose present in the milk becomes lactic acid. Most traditional yoghurt produced uses a type of fermentation bacteria. Lactobacillus bulgaricus (Lactobacillus bulgaricus) and Streptococcus thermophiles (Streptococcus thermophiles) are a group of bacteria that produce good lactic acid. Ricus (bulgaricus) is a bacterium that is beneficial to health by boosting the immune system and helping to neutralize the slightly acidic environment of the intestinal tract. The slightly acidic intestinal environment will inhibit the growth of “bad” microorganisms.
